The perfect on-the-go quick health snack! No baking required. Great between meals to curb cravings. These can be stored in the fridge and taste yummy with coffee ☕. The almond butter melts in your mouth and the dark chocolate bits are rich and bold. My sister (a new mommy) grabs this snack in the wee hours of the morning when she wakes for breastfeeding. It’s quick and mindless.
Once you make these once or twice, you’ll no longer need a recipe. Simply throw together a mixture of what’s in the pantry. You must use a food that is binding, i.e. bananas, crushed medjool dates, honey, nut butters. Binding ingredients allow the balls to be shaped. Most recipes have a combination of two. This recipe uses almond butter + honey.
Ingredients: – Serving size: 12 bites
↠ 1 cup almond butter
↠ 1/2 cup honey
↠ 2 tsp. vanilla
↠ 1 tbs. chia seeds
↠ 2 tbs. flaxseed meal
↠ 1 cup rolled oats
↠ 1/3 cup mini chocolate chips
Simply mix the first three ingredients (almond butter, honey, vanilla). Then mix in the chia seeds and flaxseed meal. Finishing with the oats and chocolate chips. Let chill in the fridge for an hour before rolling into balls.
